INSTRUCTIONS
Preheat the oven to 200C / 400F and line baking trays with baking paper or foil.
Cut the puff pastry sheets into circles using a round cutter or even a glass, then carefully transfer onto the baking trays, leaving a small gap between each piece.
Now assemble toppings - first spread tomato paste or pizza sauce on each puff pastry piece. Next, layer your favourite toppings on top.
Place the trays in the oven and bake for 15 minutes or until the pastry is crisp and the cheese is melted.
TOP TIPS
- I use my smallest scone cutter to cut the puff pastry.
- These pizzas can be reheated. I recommend only reheating in the oven or the air fryer. The microwave makes the pastry soggy.
- These mini pizza bites are freezer friendly. Store them in an airtight container in the freezer for a few months.
