These potatoes are roasted to perfection in the air fryer in 20 minutes (or less). They're crunchy on the outside, soft and fluffy on the inside and full of flavour.
The ingredients are all pantry (or crisper) staples - potatoes, capsicum / bell pepper, onion, olive oil and spices. These simple ingredients create a delicious breakfast side that is gluten-free, vegan and whole30 and paleo friendly.
Serve breakfast potatoes with bacon and eggs for a true diner experience OR try something different and pair them with these carrot and zucchini fritters for a healthy breakfast twist.

INGREDIENTS
Here's what you'll need to make a batch of these air fryer home fries (full measurements listed in the recipe card below)...
- Potatoes
- Red Capsicum / Bell Pepper
- Brown / Yellow Onion
- Paprika
- Garlic Powder
- Cayenne Pepper
- Olive Oil – OR you can use coconut oil, grapeseed oil or another good roasting oil if you’d prefer.
- Salt
Tip: Select a good roasting potato for this recipe. In Australia these are sold as "white potatoes" or "brushed potatoes". If in doubt, try to find one of these types of potatoes in your local supermarket or fruit store – Yukon Gold, Russet, Golden Delight, Sebago or Creme Royale.
INSTRUCTIONS
Mix potatoes, paprika, garlic powder, cayenne pepper and olive oil together in a large bowl.
Pour potatoes into the air fryer basket and cook on 200C / 390F for 15 minutes, shaking the basket every few minutes.
Meanwhile, place the bell pepper and onion in the mixing bowl you used for the potatoes and mix around a little. There's always spices and oil left in the bowl so may as well put this to good use.
Pour the bell peppers and onions into the air fryer basket on top of the potatoes and cook for an extra 5 minutes, shaking the basket halfway. The potatoes should be crisp and golden at this point, but if they aren't cook for a few minutes longer.
Season with salt and serve immediately.

- Keep an eye on your potatoes throughout the cooking process. Every air fryer works differently, so if you find they are really crisping up around the 10 minute mark, throw the capsicum / bell peppers and onion in then rather than waiting until 15 minutes.
