    Today's episode is all about Mediterranean Cheeses!

    I chat with Alexis Gavriel from Olympus Cheese, a Brisbane-based cheese company.  Alexis and her family manufacture halloumi, feta, ricotta and yoghurts, among other things. 

    I met Alexis about a year ago when I was lucky enough to get a behind the scenes tour of the Olympus factory here in Coorparoo.  I quickly discovered how passionate and proud Alexis and the Gavriel family are about their business and their products.  I loved getting to see the care that goes into everything they do. 

    The quality of their range is unmatched to anything I've tried both here and abroad, and if you're lucky enough to live in one of the Australian states that stocks the Olympus Cheese range you'll see exactly what I mean. 

    But if you aren't lucky enough to get your hands on their products, never fear.  Today's episode will teach you all you'll ever need to know about halloumi, feta and ricotta, and give you some great inspiration on how you can use these cheeses in your own home. 

    Alexis shares tips on what to make with these cheeses, as well as how to store them to maximise shelf life.

    This week's recipe of the week is my One Pan Greek Chicken and Potatoes.  This easy traybake has it all - crispy skin chicken thighs, melt-in-your-mouth lemon potatoes, fetta cheese, olives and blistered cherry tomatoes.  All ready in under an hour.
