Place sweet potato wedges into a large mixing bowl, then add corn flour / starch, paprika and olive oil. Mix well to combine.
Cook the Wedges

Place wedges in a single layer in the air fryer basket or rack, ensuring they aren't touching. Cook on 200C / 390F for 20-25 minutes, flipping the wedges over half way.
