This weeks recipe of the week is my shredded mexican beef. It's cinco de mayo this week so it's the perfect time to give this slow cooked tender beef a go. Fun fact - my husband proposed to me of cinco de mayo, so the day holds a special place in my heart. Serve this flavourful beef in tacos, enchiladas, burrito bowls - theres just so many ways you can use it. Oh and make a big batch because this is one recipe that tastes even better the next day!
