WHAT IS GOLDEN SYRUP
Golden syrup is a staple in most Aussie pantries. It is a delicious golden-red syrup with a smooth caramel toffee taste and smell.
It works wonderfully as a sweetener in baking recipes. You'll find it used in my Chewy Anzac Biscuits, Anzac Slice and Caramel Slice.
Golden syrup should be fairly easy to find in all major supermarket chains if you're in Australia, New Zealand, the UK and Ireland. Here in Australia it's kept with our dessert items like chocolate syrup and not with spreads like honey.
In America you can buy Lyle's Golden Syrup through Amazon or most large specialty supermarkets.
INGREDIENTS
You only need 4 simple ingredients to make these cookies (full measurements listed in the recipe card at the bottom of the post)...
- Butter
- Brown Sugar
- Self Raising Flour
- Golden Syrup
INSTRUCTIONS
Preheat oven to 180C / 350F. Line 2 large baking trays with baking paper.
Use a hand mixer to cream butter and sugar together in a large mixing bowl.
Add golden syrup and stir through to combine. Next, add flour and mix well until combined.
Roll a tablespoon of the mixture at a time into balls. Place on the baking trays, allowing room for the cookies to spread while baking. Gently press each cookie down with a floured fork.
Bake for 12-15 minutes or until golden brown and slightly soft in the centre.
Allow to cool on the trays for 10 minutes, then transfer to a wire rack to cool completely.
Store in an airtight container at room temperature for a few days.
TOP TIPS
- If you find your cookie mixture is very sticky when you're trying to roll it into balls, add a little more flour and stir well to combine. The mixture is perfect when you can touch it without it sticking.
- Don't be worried if your cookies are golden brown but still soft to touch. They firm up when they're out of the oven and cooling.
