- English Cucumber
- Healthy Guacamole
- OPTIONAL - Grape Tomatoes for decoration on top
HOW TO MAKE CUCUMBER Canapés - STEP BY STEP
Make a batch of healthy guacamole and set aside.
Wash cucumber and cut into even thick rounds.
Use a small spoon or melon baller to scoop out a small amount of seeds from the centre of each round. Discard the seeds.
Spoon the guacamole onto each cucumber round. Top each round with a grape tomato and serve.
TIPS FOR MAKING CUCUMBER BITES
- Feel free to double or triple the recipe to feed a crowd. This recipe will feed 4-6 people as an appetizer if you're planning to serve other things as well. Otherwise it's perfect to share between 2 as a snack, or simply halve the recipe to feed just yourself.
- If you want a really professional finish, put guacamole in a piping bag and pipe onto the cucumber rounds.
- If I'm making cucumber bites as a snack I skip scooping out the seeds and use the cucumber rounds like chips for dipping into guac.
- You can make these cucumber bites up to an hour ahead. Store in the fridge before serving.
