A lot of recipes will tell you that you need to soak your potatoes first to achieve this signature crisp but I must admit the results I've seen after soaking my potatoes is negligible at best.

HOW LONG TO COOK POTATO WEDGES IN THE AIR FRYER?
The average cooking time for air fryer potato wedges is estimated at 15-20 minutes. If you want your potatoes extra crispy (like me), leave them for another 5 minutes - just keep an eye on them so they don't burn. If you're using larger potatoes, add another 2-3 minutes.

WHICH POTATO IS BEST FOR POTATO WEDGES?
You'll want to use a good starchy roasting potato when making wedges. In Australia, they're sold as 'white potatoes' or 'brushed potatoes.' If in doubt, try Sebago, Russet, or Yukon Gold potatoes. Additionally, always opt for bigger ones, as they will make larger wedges!

Putting these potato wedges together could not be easier. Here’s what you’ll need (full measurements in the recipe card below)…
- Potatoes
- Paprika
- Garlic Powder
- Olive Oil
- Salt
OPTIONAL to serve - Ketchup, BBQ Sauce, Aioli or my favourite - sour cream and sweet chili sauce.
HOW TO MAKE POTATO WEDGES IN AIR FRYER
Start by washing potatoes thoroughly, and place them on a chopping board. Additionally, there's no need to peel them first
Then, you want to achieve the potato quarter cut. Cut the entire potato in half lengthwise and cut each lengthway in half. Next, cut each half in half again. Then, you should have 8 wedges from each potato in similar length and thickness to cook evenly."
Place potato wedges, oil, paprika, and garlic powder into a large bowl & mix well. Then, toss the potatoes in an air fryer basket or tray, making sure to keep a little space in between.
Cook on 200C / 390F for 20 minutes, flipping half way, or until golden and crisp. Finally, sprinkle with salt and serve immediately. Enjoy!
TIPS FOR MAKING WEDGES
- Don't overcrowd. As with most air fryer recipes, you'll want to leave enough room in your air fryer basket for your potatoes to "breathe". Therefore, place the potato wedges not too close to each other, leaving a small gap in between for hot air to circulate
- Keep an eye on your wedges the first time you cook them. Every air fryer can be different, and some cook faster! Therefore, you don't want burnt wedges. Similarly, the same goes for if you hit the 20-minute mark and they aren't crisp yet - let them cook a little longer.
- Cook in batches. Feel free to double or triple this recipe to feed a larger crowd. Especially if you have a smaller air fryer, air-frying potato wedges in batches will be the key to preparing more servings.
- Use the oven alternative. No air fryer? No problem! Make these crispy baked potato wedges in the regular oven and enjoy an equally delicious meal with minimum preparation.
- Peeling is optional. You can make air fryer potato wedges with or without their skins, and taste equally scrumptious. I go with the skin since it adds extra fibre, vitamin B, vitamin C, and iron for a healthier meal. Plus, it gives my russet potatoes a nice rustic texture and flavour.
DO I NEED TO RINSE AND SOAK POTATOES FIRST IN COLD WATER?
In many recipes, you'll see people suggesting to place potatoes in a small bowl of cool water first. The goal is to make them lose excess starch and crisp up even more. Then, they advise to pat dry the potatoes on paper towels and proceed to air fry frozen potato wedges.
However, I've found little to no success with this cold water tip and I don't use it in my preparation process. We're practical cooks here, and we want to simplify how we do things in our kitchen.
WHAT ARE SOME SEASONING VARIATIONS FOR AIR FRYER POTATO WEDGES?
I'm always down for just plain salt-seasoned potato wedges dunked in tantalizing sauces. But as far as seasoning goes, feel free to get creative! Here are some suggestions for you:
- Taco. Some cumin, paprika, cayenne pepper or black pepper, oregano, and chili powder would make the perfect spice mix for a crispy exterior.
- Truffle. Probably one of my favorites and a fancier version. Additionally, add some truffle salt, grated parmesan cheese, and garnish with fresh parsley. Finger-licking!
- Cajun. For spicier flavours, add some Cajun seasoning. Make sure to reduce salt though, since Cajun already includes it.
- Ranch. My winning combo is onion powder, garlic powder, and dried dill.
WHAT ARE SOME SERVING SAUCES FOR FRIED POTATO WEDGES?
For your potato sauces, you can go pretty simple or take the extra mile. Here are some sauce alternatives:
- Ketchup
- Ranch dressing
- Buffalo sauce
- Tartar sauce

HOW TO SERVE AIR FRYER POTATO WEDGES?
I am 110% on board if you want to eat a whole plate of potato wedges to yourself with some ketchup.

- Storage: If you don't want to use all your potatoes at once, first of all, I applaud you for your self-control! You can easily place them in an airtight container and freeze potato wedges for up to 3 months.
- Leftovers: Got any leftover potato wedges? Surely, store them in an airtight container in the refrigerator for up to 3 days.
- Reheating: When you're ready to reheat them, toss them in the air fryer at 390°F for 3-5 minutes or in your microwave for 30-60 seconds until they re-crisp.
FAQs
If your russet potatoes don't come out crispy enough, check your air fryer's recommended timing and temperatures. Thereafter, always place crispy potatoes in a single layer in the air fryer basket, with enough room to "breathe".
Don't forget to toss them periodically, especially toward the end, to achieve perfect crispiness for every square millimeter.
Absolutely! Once your potatoes are cooked in the air fryer, top them with some cheese of choice and bacon, and place them back in the air fryer until everything is nicely melted.
I recommend topping with some sliced green onion and serving with your favorite dipping sauce on the side. Additionally, it'll make for an irresistible appetizer.
This recipe can be done with or without oil. I add olive oil or extra virgin olive oil, but you can opt for alternatives such as avocado oil.
I recommend mixing your potatoes with olive oil in a large bowl. Also, avoid using the cooking spray to protect your air fryer from additives.
