One of the best things I've discovered since owning an air fryer is how awesome it is to make easy vegetable sides in! Take these delicious air fryer baked potatoes for instance.
Baked potatoes are my go-to when I can't be bothered doing much. I'll pop half a baked potato on each plate with a simple salad and some protein and call it a night.
Other times I graduate the jacket potatoes from a side dish to the main event, topping them with some more hearty ingredients like chili or baked beans.
The toppings choices are endless really. You could go with a classic sour cream and bacon bits, or try some salsa and cheese for a Mexican-style potato.

WHAT IS AN AIR FRYER?
An air fryer is a kitchen appliance that uses convection to rapidly circulate hot air around food to cook and crisp it up. It’s essentially a mini convection oven that fits perfectly on your countertop.
CAN YOU PUT RAW POTATOES IN THE AIR FRYER?
Absolutely! Potatoes in all forms are fantastic in the air fryer - baked, roasted or fries.
INGREDIENTS
Baked potatoes are incredibly easy to make. All you need is just two ingredients (full measurements listed in the printable recipe card below)...
- Potatoes: I love to use red potatoes but russet or brushed potatoes work great too.
- Olive Oil: You really don't need much, just a little to coat the outside.
Then you just need what you're going to top your potato with. Here's a few ideas:
- Butter
- Sour Cream or Greek Yoghurt
- Baked Beans
- Salsa
- Chili (YUM)
- Cheese
HOW TO MAKE AIR FRYER BAKED POTATOES - STEP BY STEP
Coat potatoes in olive oil and use a fork to pierce the skin of each potato in a few different places. Place the potatoes in the air fryer basket, ensuring they aren't touching, and cook on 200C / 390F for 30 minutes.
Flip the potatoes over and cook on 200C / 390F for a further 20 minutes, or until the potatoes are tender on the inside.
Top with whatever toppings sound good to you and enjoy!
HOW TO TELL WHEN BAKED POTATOES ARE READY
Baked potatoes are ready when a fork easily pierces through the inside of the potato, and the skin is golden brown and crisp. If you have potatoes that are on the bigger side, they may need 10 or so more minutes than the suggested timing.
TOP TIPS
- Use either red, russet or brushed potatoes - all the starchy potatoes all work.
- Don't crowd your basket. If you have a small basket 4 potatoes might not be able to fit with enough space in between, so make sure you use less potatoes in that case. Of course the recipe can be scaled up or down depending on how many people you're feeding and how big your air fryer is.
- If you want to bake in the oven, place potatoes on a baking tray and cook on 200C / 390F for 50 - 60 minutes.
- Flip the potatoes over half way through for even cooking in the air fryer.
